The Fossil Farms Nicholas Breed turkeys sent out for Thanksgiving are all fresh turkeys. They are processed with a hard chill, meaning they are brought down to 30-32 degrees and may be a little firm on the outside, but are still considered a fresh, never frozen, poultry item.
Other times of the year, we may send a frozen turkey.
